METHOD OF PREPARATION

INGREDIENTS

  • 2 cups rice for pilaf or bulgur

  • 2 finely chopped onions

  • 1 kg fresh anchovies (gavyros)

  • 4 cups water

  • Half a bunch of finely chopped parsley

  • 1 cup olive oil

  • Salt

  • Black pepper

INSTRUCTIONS

Clean and rinse the anchovies. Sauté the onions in olive oil until they turn golden. Then, add the rice or bulgur, parsley, salt, and pepper. Stir and add the water. Reduce the heat and let the rice cook.

When the rice is half-cooked, add the anchovies and continue cooking until all the liquid is absorbed.
