METHOD OF PREPARATION

Ingredients

  • 1 lamb leg (approximately 3 kg)

  • Salt & pepper

  • Oregano

  • Garlic

  • Lemon juice

  • 500g yogurt

  • 1 egg

  • 40g corn flour

  • 40g all-purpose flour

  • 240g brown rice (unpeeled)

  • 150g (1-2 pieces) onion, dry

  • 8 tbsp olive oil

  • ½ tsp cinnamon

  • 2 tbsp black raisins

  • 1 packet pine nuts

Instructions

Sprinkle the lamb with herbs, add olive oil and lemon juice, a cup of water, and roast in a preheated oven at 160°C with fan, until the lamb becomes tender. Let it cool down, then cut it into pieces and spread them out in a small baking dish.

Next, mix the yogurt with the egg and flour, and pour it over the lamb. Bake in a preheated oven at 160°C with fan until it takes on a golden color.

Meanwhile, in olive oil, sauté the onion and rice, then gradually add water until the rice is cooked. Add cinnamon, raisins, and pine nuts, and mix.

Serve the lamb, garnished with the rice.
