Vareniki
METHOD OF PREPARATION
Ingredients
For the dough:
1/2 kg flour
2 cups water
1 tbsp salt
1 egg
For the filling:
400g mizithra cheese
5 tbsp cow’s butter
Instructions
In a bowl, combine the flour, water, egg, and salt. Knead until the dough is firm and doesn’t stick to your fingers. Cover with a towel and let it rest for 30 minutes.
Divide the dough into small balls, dust with flour, and roll out each ball into thin sheets using a rolling pin. Cut each sheet into small squares, approximately 4×4 cm.
Place a teaspoon of mizithra cheese in the center of each square. Fold the dough over to cover the filling, then press the edges with a fork to seal them and prevent the filling from leaking during boiling.
In a pot, bring water to a boil and add a tablespoon of salt and a tablespoon of cow’s butter.
Drop the vareniki into the boiling water and cook for 7 to 10 minutes, or until they float to the surface.Once cooked, remove with a slotted spoon and serve. Drizzle with melted butter and a dollop of yogurt.
