Trachanas with sausage

METHOD OF PREPARATION

Ingredients

  • 3 – 4 heaping tbsp red trachanas (vegetable trachanas)

  • 2 cups water

  • 1 small onion

  • 1 small coffee cup of oil

  • 2 rustic sausages

  • Salt

  • Pepper

Instructions

Finely chop the onion, then heat the oil in a pot. Sauté the onion until softened, then add the water. Once the mixture begins to boil, add the red trachanas and stir continuously over low heat until it thickens.

Score the sausages and cook them in a pan without oil, as they will release their own fat. Once cooked, chop the sausages into pieces and add them to the prepared trachanas. Serve hot.
