Stuffed Grivadi

METHOD OF PREPARATION

Ingredients

  • 1 grivadi (about 3 kg)

  • 1 cup olive oil

  • 1 ½ cups Carolina rice

  • 3 cups water

  • 100-150 g golden raisins

  • 1 kg onions

  • Salt

  • Black pepper

  • 2-3 bay leaves

  • Allspice

Instructions
Sauté one onion in half of the olive oil. Add the rice with a little water (1 cup) and let it come to a boil. Add the raisins, salt, and pepper. Stuff the grivadi with the mixture, sew it up, and place it in the baking dish. Cut the remaining onions into large pieces and place them around the fish. Add the water and bake at 200°C for 1.5 hours.
