Sardines Plaki

METHOD OF PREPARATION

Ingredients

  • 1 kg sardines, cleaned and well washed
  • 4 large potatoes
  • 600-700 g ripe tomatoes
  • 600-700 g dry onions
  • 4 green chili peppers
  • 2 Florina peppers
  • 1 stalk of celery
  • 2 garlic cloves
  • 1 bunch of parsley
  • Olive oil
  • Salt
  • Red pepper
  • Black pepper

Instructions

Peel and grate the tomatoes. Slice the onions, peppers, and chop the celery and garlic. Sauté the onions, peppers, garlic, tomatoes, and celery in olive oil. Add sweet red pepper, black pepper, and salt, and cook the sauce for about 30 minutes. Slice the potatoes into rounds and place them at the bottom of the baking dish. Arrange the sardines on top, after seasoning them with salt and pepper, and pour the sauce over them without completely covering the fish. Place thin lemon slices on top of the dish and cover the baking dish with aluminum foil. Bake at 200°C for 1 hour, then remove the foil and continue baking at 180°C for another 30 minutes until the dish is golden brown.
