Sarakatsaniki pie
METHOD OF PREPARATION
Ingredients
1 kg soft flour
1 tsp salt
1 cup cow’s butter
800 g feta cheese
2 glasses lukewarm water
Instructions
In a large bowl, combine the flour, water, and salt. Knead the ingredients with your hands for 10 minutes until a very soft dough forms, then let it rest. Next, divide the dough into 6-8 pieces, depending on the size of the baking pan you’ll use. Melt the butter, grease the pan, and take each piece of dough, stretching it into a thin sheet with your hands, adding a little butter as you go.
Place the first sheet of dough in the pan, and crumble some feta cheese on top. Press it down with your hands. Continue alternately layering the dough with butter and crumbled feta until all the ingredients are used up. At the end, fold the pie diagonally and turn it upside down. Press it gently with your fingers to spread it evenly across the pan, then pour the remaining butter over the top. Do not score or cut it into pieces.
Bake in a preheated oven at 180°C for 1 hour.
