Rooster with traxanas
METHOD OF PREPARATION
Ingredients
1 rooster (free-range)
1 cup wheat trachanas
1 tbsp raisins
6 prunes
1 dried onion
Salt
Black pepper
Cinnamon
Instructions
We wash the rooster thoroughly, finely chop the onion and its giblets, and sauté them in a little oil. Then, we add the trachanas until it browns. We add the prunes, raisins, cinnamon, salt, and pepper, stir, and remove from heat.
We season the rooster with salt and pepper on the outside and inside of the belly. We fill the belly with the mixture using a spoon, then close it with toothpicks to prevent the filling from spilling out.
We place it in a baking dish, add a little water, and bake at 180°C for two and a half hours.
