Revani
METHOD OF PREPARATION
Ingredients
1 cup fine semolina
2 cups flour
1 cup milk
250 g butter
½ cup almonds (optional)
6 eggs
Orange zest
2 tsp baking powder
1 ½ cups sugar
4 vanilla pods or 4 tsp vanilla extract
4-5 mastic grains from Chios, crushed
Instructions
Separate the egg yolks and beat them with the sugar and butter until the mixture becomes pale.
In a separate bowl, beat the egg whites and gradually add them to the sugar mixture, stirring continuously.
Gradually add the milk, orange zest, vanilla, mastic, flour with baking powder (spoon by spoon), and finally the semolina. Mix with a spoon until you have a smooth mixture.
Grease a baking pan, spread the batter evenly, and optionally sprinkle almonds on top.
Bake in a medium-temperature oven for about 45 minutes.
For the Syrup:
About 15 minutes before the revani is done, prepare the syrup by boiling sugar and water, stirring continuously. Once it thickens, add the lemon juice and remove from heat.
Pour the syrup over the revani while it is still warm.
