Pork with Leeks and Celery
METHOD OF PREPARATION
Ingredients
6 servings of pork meat
2 large onions
6 leeks
2 eggs
2 lemons
1 cup olive oil
Salt & pepper
Instructions
Sauté the chopped onions in oil over medium heat. Once they soften, add the pork. Sauté the meat until it turns golden brown. Then add the leeks, cut into rings, and let them steam. Stir and add salt and pepper. Once they slightly soften, add a bit of hot water to cover the dish. When it comes to a boil, turn off the heat.
For the avgolemono: In a bowl, whisk the eggs and lemon juice. Gradually add 2 ladles of the broth from the pot, stirring constantly. Pour the avgolemono into the pot and shake it so it spreads evenly.
