Otia ( pontian recipe )

METHOD OF PREPARATION

Ingredients

  • 350g cow’s milk yogurt

  • 1 cup milk

  • 4 eggs

  • 2 packets baking powder

  • pinch of salt

  • ½ cup oil

  • flour (as needed)

Instructions

Beat the eggs with sugar in a bowl until pale. Gradually add the milk and yogurt, mixing well. Then add the baking powder, salt, and slowly incorporate the flour. Knead until a pliable dough forms, oiling your hands occasionally to prevent sticking.

Roll out the dough into a square sheet about a finger’s thickness. Cut into small diamond shapes with a sharp knife. Make a small hole in the center of each diamond, take one corner, fold it over, and thread it through the hole to create a bowtie shape (“otia”).

Fry the oatia in hot olive oil over low heat until golden (do not overbrown to keep them fluffy). Serve dusted with sugar or drizzled with honey.
