Mussels Pasta with Tomatoes & Feta

METHOD OF PREPARATION

Ingredients

  • 1 ½ kg fresh mussels with shells, cleaned
  • 200 g medium kritharaki (orzo)
  • 3 ripe tomatoes
  • 2 medium onions, chopped in a blender
  • 2 garlic cloves, sliced thin
  • 1 cup olive oil
  • 200 g spicy feta cheese
  • 40 ml ouzo
  • ¼ tsp ground allspice
  • 4 cups hot water
  • Salt
  • Pepper

Instructions

In a wide pot, sauté the onion with the garlic in olive oil for 5-10 minutes until they soften. Then, add the mussels and the kritharaki, stirring well with a wooden spoon. Next, add the tomatoes chopped into cubes, salt, hot water, ground allspice, and ouzo. Cover the pot with a lid and reduce the heat. Let the dish simmer for 20 minutes until the orzo becomes creamy. Crumble the feta cheese into the dish and serve with plenty of freshly ground black pepper.
