Milk pie of zervochoria

METHOD OF PREPARATION

Ingredients

  • 1 sheet of phyllo pastry

  • 2 liters of milk

  • 1 cup of Carolina rice

  • 1 glass of sugar

  • 6 eggs

  • A pinch of salt

  • Cinnamon

Instructions

  1. Rinse the rice and boil it for 10-15 minutes along with the milk and half of the sugar. Add a pinch of salt and let the mixture cool.

  2. In a separate bowl, beat the egg whites with the remaining sugar and cinnamon until well mixed. Gradually add the egg yolks while continuing to beat.

  3. In a third bowl, combine the two mixtures and stir well until they are fully homogenized.

  4. Butter a baking pan, lay the phyllo pastry sheet on it, and spread the mixture evenly over the pastry.

  5. Bake in the oven at 200°C (392°F) for 45 minutes.
