Milk pie of zervochoria
METHOD OF PREPARATION
Ingredients
1 sheet of phyllo pastry
2 liters of milk
1 cup of Carolina rice
1 glass of sugar
6 eggs
A pinch of salt
Cinnamon
Instructions
Rinse the rice and boil it for 10-15 minutes along with the milk and half of the sugar. Add a pinch of salt and let the mixture cool.
In a separate bowl, beat the egg whites with the remaining sugar and cinnamon until well mixed. Gradually add the egg yolks while continuing to beat.
In a third bowl, combine the two mixtures and stir well until they are fully homogenized.
Butter a baking pan, lay the phyllo pastry sheet on it, and spread the mixture evenly over the pastry.
Bake in the oven at 200°C (392°F) for 45 minutes.
