Meatballs with armi
METHOD OF PREPARATION
Ingredients
750g beef mince
½ kg pork mince
Flesh from 6 thick slices of stale bread
1 large onion, grated
½ cup chopped parsley
5 ripe tomatoes, chopped
1 tablespoon tomato paste
½ cup olive oil
2 garlic cloves
Salt & pepper
4 tablespoons flour
½ cup water
Instructions
Soak the bread in water and mix the minced meats with the onion and parsley, seasoning with salt and pepper. Drain the bread and add it to the mixture. Knead the mixture well and let it rest for half an hour. Then, shape small meatballs, dust them with flour, and fry them in hot oil. Place them on a plate with paper towels to absorb the excess oil. In a blender, add the water and puree the tomatoes and tomato paste.
Next, in a deep pan, sauté the garlic in oil, add a pinch of salt and flour, stirring until the flour is lightly browned. Add the pureed tomato mixture and immediately add the fried meatballs. Lower the heat to the minimum and let the dish simmer until the sauce thickens.
Serve hot.
