Louvidia with pork meat

METHOD OF PREPARATION

Ingredients

  • 1 kg of louvidia (green beans)

  • 1 kg of pork meat, boneless, with fat, from the ribs

  • 2 dried onions

  • 1 cup olive oil

  • 2 tablespoons red pepper

  • 3 tablespoons tomato sauce

  • 1 teaspoon oregano

  • Salt

  • Red pepper (for seasoning)

Instructions

Soak the beans (louvidia) overnight in warm water to soften their skins. In the morning, boil them for a little while and drain. In a pot, sauté the meat until it forms a crust. Finely chop the onions and sauté them as well. Add the beans, cover them with water, add salt, red pepper, and tomato sauce, and let them cook for 1 hour and 15 minutes over medium heat. Just before removing from the heat, sprinkle with oregano.
