Kavourmas with Potatoes

METHOD OF PREPARATION

Ingredients

  • 3 large potatoes from Ano Vrontou

  • 2 medium onions, finely chopped

  • 2 tablespoons butter

  • 250g Kavourmas, crumbled or coarsely chopped

  • 2 tablespoons olive oil

  • Salt & pepper to taste

  • 2 teaspoons dried mint

  • 1 teaspoon paprika

  • 1/2 teaspoon hot chili flakes (boukouvo)

  • 150g grated kefalotyri cheese

Instructions

Peel the potatoes, cut them into thin slices, and place them in cold water until ready to use. Heat 1 tablespoon of butter in a large frying pan over medium heat and sauté the onions until they soften. Remove the onions from the pan and set them aside. Grease a baking dish with butter and layer the potatoes so that each slice partially covers the previous one. Lightly salt and pepper the potatoes, then add a bit of onion on top. Sprinkle some kavourmas over the onions along with a little mint, paprika, chili flakes (boukouvo), and kefalotyri cheese. Drizzle with 1 teaspoon of olive oil. Repeat the layers and finish with a layer of potatoes. Pour olive oil and a bit of melted butter on top and sprinkle with the remaining kefalotyri cheese. Cover with aluminum foil and bake in the oven at 200°C for 30-35 minutes.
