Hersi (Kappadokian)

METHOD OF PREPARATION

Ingredients

  • 1 kg beef, cut into pieces

  • 1 small chicken

  • 1 onion

  • 2 spring onions

  • 1 ½ cups of cracked wheat (bulgur)

  • Olive oil

  • Salt

  • Red pepper

Instructions

Boil the beef well in a large pot. In the same water where the beef was boiled, add the chicken and let it cook. Once the chicken is cooked, remove the skin, debone it, and chop it into small pieces. Drain the water, and in the same pot, boil the cracked wheat (after rinsing it thoroughly).

Next, add all the ingredients to the pot and stir until everything softens. Finely chop the onions and sauté them with red pepper. When serving the dish, drizzle the sautéed onions on top.
