METHOD OF PREPARATION
Ingredients
For the Dough:
5 cups flour
1 cup sugar
2 tsp salt
½ tsp cinnamon
2½ cups water
250 ml sesame oil
For the Filling:
2 cups chopped walnuts
½ cup breadcrumbs
½ cup sugar
1 tbsp cinnamon
1 tsp cloves
For the Syrup:
2 cups grape honey (petimezi)
2 cups sugar
4 cups water
Instructions
In a food processor, knead all the ingredients for the dough very well for 15 minutes, except for the sesame oil. Place the mixture in the refrigerator for 10 minutes to rest.
Divide the dough into 2 balls and roll them out into thin sheets using the “sun method.” Oil each sheet separately and keep them wrapped in plastic wrap in the refrigerator.
In a bowl, mix all the ingredients for the filling. Roll out the first sheet with a rolling pin and a little flour. Lightly oil the sheet and spread some of the filling over it. Carefully roll it up from the edges, cut it into pieces, and place them on a baking tray. Repeat the process for the second sheet.
Finally, oil the top side, spray with a little water, and bake in a preheated oven at 185°C (365°F) for about 30 minutes, or until golden brown.
For the syrup, bring the water to a boil in a pot and add the sugar and petimezi (grape molasses) to thicken it. Once the syrup is hot, pour it over the cooled dessert. Let the syrup be absorbed and enjoy!
