METHOD OF PREPARATION

Ingredients

  • 5 eggs
  • 5 tbsp flour

  • 2 cups water

  • 250g kefalotyri or other hard cheese

  • 1 cup olive oil

  • Salt

  • Pepper

Instructions

Cut the cheese into small pieces, coat them in flour, and fry them in oil. Then remove them from the pan. In the same oil, lightly toast the flour. Add water, stirring constantly to prevent lumps and form a smooth paste.

Once it starts boiling, add the fried cheese pieces, eggs, salt, and pepper. Stir until the eggs are cooked. Serve hot.
