fasoulontavas ( Bean stew )

METHOD OF PREPARATION

Ingredients

  • 1/2 kg beans

  • 1 very large onion

  • 1-2 tsp sweet paprika

  • 1/2 tsp chili flakes (boukovo) or cayenne pepper

  • 3 large tbsp tomato paste

  • 1 cup oil

  • 2 tbsp salt

Instructions

Soak the beans the night before. The next morning, wash the beans well and place them in a large pot with a little water over high heat. Once they come to a boil, discard the water and add fresh water until it covers the beans halfway. Continue boiling.

Add the coarsely chopped onion, 2/3 of the oil, and the peppers. Once it starts to boil again, reduce the heat. After about an hour, taste the beans, and if they are ready, add the salt and tomato paste. Stir gently to dissolve the tomato paste, then transfer the dish to a clay pot (tava) or baking dish. Pour the remaining oil on top and bake in a hot oven (250°C with fan) for 30-45 minutes. Stir occasionally when you see the dish starting to form a crust. It is ready when it thickens and most of the water is absorbed.
