Easter Lamb
METHOD OF PREPARATION
Ingredients
1.5 kg goat meat, cut into pieces
3 bunches of fresh green onions, chopped
3 cups of rice
100 g raisins
Juice of 1 lemon
Salt
Black pepper
Instructions
Cut the goat into portions and rinse it with cold water. Place it in a pot with enough water to cover it and boil until tender, skimming off any foam as needed. Once cooked, drain the meat and reserve the broth.
Sauté the green onions in half of the oil, then add the rice. In a baking dish, layer the raisins first, followed by the rice, and then the meat.
In a bowl, whisk together the lemon juice, remaining oil, salt, black pepper, and the reserved broth. Pour this mixture over the goat. Cover with aluminum foil and bake at 180°C for 2 hours.
