Chicken with Onions
METHOD OF PREPARATION
Ingredients
1 free-range chicken
1 kg onions for stew
1 cup olive oil
6 whole allspice berries
Black peppercorns
2 cinnamon sticks
2 tomatoes, chopped (without seeds)
Salt
1 cup water
1 cup red wine
Instructions
Wash the chicken thoroughly and cut it into small pieces. Sauté it in the olive oil for a long time over medium heat until the skin forms a crust.
Then, add the tomatoes, spices, and salt. Stir for a while and remove from heat.
Next, peel the onions and blanch them in hot water for 7 minutes. Drain them, place them in a baking dish, and pour the sauce and chicken on top.
Bake in the oven at 180°C for one hour. Ten minutes before turning off the oven, add the wine.
