Bourani

METHOD OF PREPARATION

Ingredients

  • 2 cups cornmeal

  • A little salt

  • ½ tsp baking soda

  • 6 cups water

  • Various greens (spinach, sorrel, wild chicory)

  • 2 eggs

  • 300 g feta cheese

  • 1 cup milk

  • ½ cup olive oil

Instructions

In a bowl, we add the cornmeal, salt, baking soda, and 6 cups of water. We mix the mixture and pour it into a greased baking tray. We lightly blanch the greens and place them in a bowl along with the oil, eggs, cheese, and milk. After mixing, we pour them over the cornmeal mixture. Then, we sprinkle a little cornmeal on top and bake the tray in the oven for about 1 hour until the bourani turns golden brown on top.
