In a pot, bring 6 cups of water to a boil and add the cleaned and chopped green beans, cut into small pieces, about 2 cm long. Once they start softening, add the bulgur and simmer on medium heat for about 30 minutes, until the dish thickens. Meanwhile, prepare a sauce by sautéing the onion and adding the fresh grated tomato and parsley.
Cook the sauce for about 15 minutes, then pour it over the green beans and bulgur, simmering for an additional 5 minutes.
