METHOD OF PREPARATION
Ingredients
1 cup goat butter
1 cup cornstarch
2 cups sugar
1 cup peeled almonds
2 ½ cups water
1 tbsp lemon juice
Powdered sugar
Instructions
Crush the almonds in a mortar and toast them in a non-stick pan with 2 tablespoons of butter. In a large pot, add the granulated sugar, butter, and two cups of water, and let it boil. Dissolve the cornstarch in the remaining water. Once the sugar has boiled and dissolved well, add the cornstarch, almonds, and lemon juice. Stir well with a wooden spoon until the mixture thickens. Let the mixture cool down so that it becomes easier to handle. Take a small amount of the mixture, about the size of a golf ball, shape it into a ball between your hands, and roll it in a shallow dish with powdered sugar.
